Simply Korean Spicy Cold Noodles with Thin Steak

Ingredients:

  • Thin Beef Steak, 250g
  • Somyeon, 150g (Any thin wheat noodles)
  • Fermented Kimchi, 1/2 cup
  • Cucumber, thinly sliced
  • Rocket Leaves, 1/4 cup
  • Egg, 1pc, Hard boiled (optional)

Condiments:

Spicy Sauce

  • Korean Red Chili Pepper Sauce (gochujang), 2 tablespoons 
  • Kimchi Juice, 1/4 cup
  • Soy Sauce, 1 tablespoon 
  • Sesame Oil, 1 tablespoon 

Beef Steak 

  • Salt
  • Ground Pepper 

Garnish:

  • Sesame Seeds

How to make:

Steps:

Somyeon (Thin Wheat Noodles) 
    1. Bring a medium pot of water to a boil while preparing the Beef steak and the cucumber .
    2. Add the noodles to the pot, cook the noodles according to the package instructions. Drain quickly and shock in icy cold water to stop cooking. Drain again.
    3. In a mixing bowl, combine the drained noodles with the spicy sauce, toss everything until the noodles are evenly coated with the sauce.
    4. Taste and adjust the seasoning if necessary.

Beef Steak 

    1. Pat the steak dry with paper towels.
    2. Season the steaks generously on both sides with salt and pepper.
    3. Heat a pan over medium-high heat.
    4. Sear on 1 side for 45 seconds, flip once, and sear for 30 seconds.
    5. Reduce heat to low, add 1 teaspoon soy sauce, quick stir fry for another 30 seconds.
Packing  
    1. In the lunch box (or serving plate), place the cucumber thin slices on top of the spicy noodles.
    2. Then place the Beef steak, Rockets leaves, Kimchi and the hard boiled egg.
    3. Sprinkle the sesame seeds on top.

Notes:

  1. If the kimchi sauce is unavailable, you can use soy sauce and rice vinegar.
