Easy Taiwanese Cold Noodles (Liang Mian 涼麵)

Ingredients:
Egg Noodles, 300g
  • Taiwanese Boneless Chicken Nuggets (frozen, store-bought)
  • Cucumber
  • Marinated Soft Boiled Eggs (store-bought)
Condiments:
  • Sesame Sauce 
  • Sugar, 2tsp
  • Black Vinegar, 1 tbsp
  • Soy Sauce, 1 tbsp
  • Chili Oil, optional

Garnish:

  • Oba (Basil leaves)
  • Baby Oak Leaves
  • Sesame Seeds


How to make:


Preparations:

  1. Cut the cucumber into strips

Steps:


Cold noodles:

  1. Add noodles to lightly salted water and cook according to package instructions.
  2. Rinse the cooked noodles under cold running water.
  3. Drain the noodles and cold the noodles with ice.
  4. Toss the noodles with the sesame oil and its ready to serve.

Sesame Sauce:

  1. Mix all ingredients for dressing in a mixing bowl. Whisk to combine everything.
  2. Feel free to add more or reduce some according to your preference.

Taiwanese Boneless Chicken Nuggets:

  1. Evenly place the nuggets on the plate.
  2. Cook in the microwave for 5 minutes.
  3. Take out and rest the nuggets on the oil absorbing paper for a few minutes.
  4. Cook the nuggets again in the microwave for 2 minutes.

Notes:

  1. Make sure you don’t overcook the noodles. It should be a little bit firm.
  2. You can also add a spoon of peanut butter for more flavours.
