Broccoli and Sausage Summer Pasta Salad

Ingredients:

  • Fusilli, 200g (or your favourite short pasta)
  • Sausage, 3pcs, sliced
  • Umezu Octopus (梅酢たこ), 70g
  • Cherry Tomato, 1/2 cup, halved
  • Broccoli, 1/2 Head
  • Red Onions, 1/4 pcs, Finely Chopped

Condiments:

  • Olive Oil
  • Lemon Juice
  • Salt
  • Cracked Pepper 
  • Sugar

Garish:

  • Parsley Flakes

How to make:

Preparations:

Fusilli & Broccoli Florets
    1. Boil generous amount of salted water. Cook the pasta to al dente according to the package instructions. 
    2. At the same time, wash and cut the broccoli florets into tiny pieces.
    3. Throw in the broccoli and cook for 2 minutes.
    4. Drain in a colander, then rinse with cold water. 

Pan Fried Sausage 

    1. Heat the oil in a pan, add the sliced sausage, cook until browned and cooked through.

Steps:

  1. In a mixing bowl, add chopped red onion, olive oil, lemon juice, salt, pepper and sugar.
  2. Shake the pasta and broccoli florets once more, then add it to the bowl.
  3. On top, place the halved cherry  tomatoes, pan fried sausage and omezu octopus.
  4. Stir gently to combine. Taste and add more flavour if necessaries.
