Gyūdon (Simmered Beef and Rice Bowl), Tamagoyaki

Ingredients:

  • Beef, 450g
  • Onion, Halved and Sliced
  • Red Onion, 1/4pcs and sliced
  • Egg, 5pcs
  • Mixed mushrooms 
  • Broccoli 
  • Asparagus 
  • Chicken Meatballs
  • Cooked Rice, 2 cups

Condiments:

Gyudon
    • Cooking Sake, 1 teaspoon 
    • Soy Sauce, 2 teaspoons 
    • Dark Soy Sauce, 1 teaspoons

Tamagoyaki

    • Sugar, 3 teaspoons
    • Mirin, 2 teaspoons
    • Soy sauce, 2 teaspoons
    • Kosher Salt, 3 pinch
Others

  • Sesame Oil
  • Salt and Pepper

Garnish:

  • Oba
  • Cherry Tomatoes
  • Beni Shōga 
  • Sesame Seed
How to Make:

Preparations:
  1. Cut all onions into thin slices.
  2. Wash and soak the mushrooms for 5 mins.
Steps:
Gyudon (Japanese Simmered Beef Rice Bowl)
    1. Heat oil in a pan over medium high heat.
    2. Cook the sliced onions and red onions until softened.
    3. Add the beef and cook until the beef is slightly browned.
    4. Add sugar, cooking sake, soy sauce and dark soy sauce, stir well.
    5. Reduce heat to low; Cook, covered until the beef is cooked through.
    6. Simply place the cooked beef on top of the cooked rice.
Tamagoyaki (Japanese Rolled Omelette)
    1. Gently whisk the eggs in a bowl.
    2. Combine the condiments and mix well.
    3. Heat the pan over medium hear, dip a folded paper towel in the oil, and apply some of it to the pan.
    4. Once the pan is hot, pour a thin layer of the egg mixture into the pan, tilting the pan, make sure the egg mixture coats the cooking surface.
    5. Start rolling the egg into a log shape, from one side to the other side.
    6. Apply more oil to the pan with a paper towel, pour in a new thin layer of the egg mixture and roll again.
    7. Repeat the process until reach your desired thickness of the Tamagoyaki.
    8. Brown the omelette a little bit. Remove it from the pan.
Notes:
  1. If the shape of Tamagoyaki is not good enough, or you want it more firm. You can place the omelette on a bamboo sushi mat to help set its shape.  
  2. Direct remove the Tamagoyaki from the pan and while its hot, roll it in the bamboo mat and let it stand for a few minutes.
