Ingredients:
- Prawns, 200g Peeled and Deveined
- Rice Vermicelli, 100g
- Mixed Baby Spinach and rocket, 1.5 cups
- Lime, 2pcs
- Red Chilli, 2pcs, thinly sliced lengthways
- Fresh Coriander, 1 tbsp, Chopped
Condiments:
- Olive Oil, 2 teaspoons
- Ground Black Pepper
For the dressing:
- Fish Sauce, 1 tsp
- Fresh Lime Juice, 2 tbsp
- Soy Sauce, 2 tbsp
- Toasted Sesame Oil, 2tsp
Garnish:
- Black Sesame Seeds
How to make:
Preparations:
Vermicelli Noodles
- Boil the vermicelli noodles and cook until softened.
- Drain noodles and rinse with cold water, stirring to separate the noodles.
Steps:
- Cook prawns with chilli flakes in a non-stick frying pan for 2-3 minutes, or until prawns are just cooked through.
- In a large bowl, mix together all of the dressing ingredients then toss into the noodles and add the prawns.
- Mix in the coriander and sliced red chilli.
- Serve on a bed of baby rocket and spinach, with lime wedges on the side.
- Finally, scatter over the Black sesame seeds.
