20-minute Easy Prawn Salad in Thai Style

Ingredients:

  • Prawns, 200g Peeled and Deveined 
  • Rice Vermicelli, 100g
  • Mixed Baby Spinach and rocket, 1.5 cups
  • Lime, 2pcs
  • Red Chilli, 2pcs, thinly sliced lengthways
  • Fresh Coriander, 1 tbsp, Chopped

Condiments:

  • Olive Oil, 2 teaspoons 
  • Ground Black Pepper

For the dressing:

    • Fish Sauce, 1 tsp
    • Fresh Lime Juice, 2 tbsp
    • Soy Sauce, 2 tbsp
    • Toasted Sesame Oil, 2tsp

Garnish:

  • Black Sesame Seeds

How to make:


Preparations:

Vermicelli Noodles
    1. Boil the vermicelli noodles and cook until softened. 
    2. Drain noodles and rinse with cold water, stirring to separate the noodles.
Steps:
  1. Cook prawns with chilli flakes in a non-stick frying pan for 2-3 minutes, or until prawns are just cooked through.
  2. In a large bowl, mix together all of the dressing ingredients then toss into the noodles and add the prawns.
  3. Mix in the coriander and sliced red chilli.
  4. Serve on a bed of baby rocket and spinach, with lime wedges on the side.
  5. Finally, scatter over the Black sesame seeds.
